This is about the easiest thing in the world to make and people LOVE it. It’s the king of all comfort foods!

My Mama’s Macaroni and Cheese

1 16 oz. pkg. macaroni noodles, cooked in salted water

1 pint of heavy whipping cream

At least 1 lb. of medium sharp cheddar cheese, cut into slices

About 1/2 lb. of muenster cheese, cut into slices

3 eggs

About 1/2 stick of butter (Butter is better than margarine.)

Directions:

Boil the macaroni in salted water until tender. Taste it, and if it’s too salty, put the noodles in a colander and rinse them off.

Melt a couple of tablespoons of butter in the bottom of a casserole dish and then add a layer of noodles. On top of the noodles, add a layer of cheddar and muenster, covering all the noodles with cheese, and then add a few pats of butter. Add another layer of noodles, another layer of cheese, and a few more pats of butter. Repeat until you’re out of noodles and cheese, which for me is usually three layers, and top the last layer of cheese with a few more pats of butter. In a separate dish, mix up the eggs in the whipping cream and pour it over the entire casserole. Dot with any additional butter on top.

Bake uncovered at 375 for about 20 minutes and check it. Slide the back of a spoon down one side of the casserole to check if it’s congealed. If it’s still runny (mine usually is) continue to bake, checking it every 5 minutes or so until you get that custardy consistency. Serve it hot! If you wait until the cheese cools off, it’s not nearly as good.
