It was the kickoff weekend for college football and we were all exited at the bar. The summer has been long and slow as far as business was concerned so the anticipation was pretty high. Not just for me but for the employees as well. Servers make more tips. The kitchen staff makes more with the additional hours. it’s a win-win-win for everyone. We had a bar clean up a week before to get the place looking good and smelling good. We had trained the new staff. I even had a meeting with everyone to get them all prepared as to what to expect. We ordered 100 cases of beer and ordered plenty of liquor to sell. What did we forget? CHEESE! That’s right…CHEESE! What is our number 1 seller? Pizza. What do you put on every pizza? CHEESE! It was Saturday morning at 11:55 when the bartender told me that we were out of FREAKING cheese. How do you run out of cheese in the first hour of business on the first day of college football? I tried to remain calm. But I did call my head cook and let him know how I felt about this. And then, I took my but to the grocery store and bought about $150 worth of shredded cheese. UGH…

The rest of the day went pretty smooth. I went to the big Alabama/Michigan game at the stadium. I was sitting in a suite that a friend of mine owns and its right next to Jerry Jones’ suite. Catching a glimpse of Mr. Jones and shaking his hand is always fun. I like to just sit back and watch the rows of power players walk up and shake his hand.

The next day was the big party at Kidd’s house. He had a house full of guests. I was given the job of carving the chicken. On a side note, if you are looking for a great BBQ grill, look into getting the Big Green Egg. It’s a pretty expensive grill but the food tastes so great. The meat just falls off the bone. Anyway, I guess I had been at Kidd’s house about an hour and a half when I got the text from the bar. “We are out of French fries.” UUUGGGHHHH! Come on guys. French Fries go with everything on the menu. It was 7pm on Labor Day Sunday and the Baylor game was on. I’m at a party. So, since I didn’t have a person on staff that was available to go get potatoes, guess who got to leave their party to go get them? Yup. Running a business is so much fun!
